Blend: Sangiovese 80% Canaiolo 15% Colorino 5% Vineyard: south-west exposure, altitude 250 m. Training system: spurred cordon Planting density: 4500/5000 plants per hectare Harvest: second half of September Fermentation temperature: 28/30 degrees Vinification: fermentation and maceration in steel vats for 15-16 days. Malolactic fermentation in steel. Ageing: cement vats
TASTING NOTES
Colour: lively and consistent ruby red Nose: fresh, winey, floral and spicy, intense and persistent, dry. Palate: simple, soft, easy-drinking and genuine like old-style Chianti. Pairings: cured meats, light sauces and white meat⦠the everyday wine Serving temperature: 16°/18°
