The chocolate factory! No, it's not just a lovely tale, but the true story of a delicious excellence entirely Italian! One of the products I am most passionate about, and one that can never be missing from my favourites, is definitely chocolate! My region, Piedmont, boasts a long tradition of artisan excellence in cocoa processing, spanning both small and large producers, so there is certainly no shortage of choice. A few months ago I accepted an invitation from a prestigious company in my area, Domori, run by Gianluca Franzoni. I had the pleasure and the opportunity to visit the production facility, where order, organisation and know-how are truly at the highest levels. The finest artisan tradition and innovation are beautifully balanced there, placing the Domori company among the most important in Italy in the field of excellence production. At the end of the visit, the moment finally came to taste the various products! I will never forget the exact moment I opened a pack of Domori chocolate! From the very first instant I appreciated its fine, intense aroma. Tasting it then confirmed that I was enjoying a product of markedly superior quality compared to what is normally found on the market. Since 1997, Gianluca Franzoni has been the driving force behind this prestigious company, located in None, in the province of Turin, a city known worldwide for its great artisan chocolate-making tradition. In 1993, his great passion for nature, biodiversity, gastronomy and cocoa in particular led Gianluca to Venezuela, one of the few areas in the world where what is probably the rarest and most prized variety of cocoa is grown, the "Criollo". A plant on the verge of extinction which, thanks to his work throughout the entire supply chain in South America and Central America, has finally become known and valued, leading to the creation of new privately owned plantations dedicated to growing extra-fine, top-quality cocoa. Domori was the first company to use this prized cocoa variety with its outstanding characteristics, and it is the only one to produce a bar using the Criollo variety on its own, with the simplicity of a recipe made using only cocoa mass and sugar. The constant pursuit of perfection and purity led its founder to create a genuine "Chocolate Tasting Code". The "Domori" brand was born from the fascination that the seventeenth-century city of Venice has always held for the company's founder. The name in fact refers to the "Due Mori" (Two Moors), the statues that strike the hours on the bell of the clock tower in St Mark's Square. Two, like the seeds of cocoa and coffee, products that are the very emblem of pure gastronomic pleasure!
