The Chocolate Factory! No, this isn't just a lovely story, but the true tale of a truly excellent, all-Italian, mouthwatering reality! One of the products I'm most passionate about, and one that simply must be among my favorites, is definitely chocolate! My region, Piedmont, boasts a long tradition of artisanal excellence in cocoa processing, thanks to both small and large-scale producers, so there's certainly no shortage of options. A few months ago, I accepted an invitation from a prestigious company in my area, Domori, founded by Gianluca Franzoni. I had the pleasure and opportunity to visit the production facility, where order, organization, and know-how are truly at the highest levels. The finest artisanal tradition and innovation are beautifully balanced here, placing Domori among the most important companies in Italy for excellence in production. At the end of the visit, the moment I had been waiting for finally arrived: the tasting of the various products! I will never forget that exact moment when I opened a package of Domori chocolate! I immediately appreciated its refined and intense aroma. Tasting it then confirmed that I was experiencing a product of clearly superior quality compared to those normally found on the market. Since 1997, Gianluca Franzoni has been the driving force behind this prestigious company, located in None, in the province of Turin, a city renowned worldwide for its great artisanal chocolate-making tradition. In 1993, his great passion for nature, biodiversity, gastronomy, and cocoa in particular led Gianluca to Venezuela, one of the few places in the world where what is probably the rarest and most prized cocoa variety, "Criollo," is grown. This plant, at risk of extinction, has finally been recognized and given the value it deserves thanks to his work throughout the supply chain in South America and Central America, including the creation of new privately owned plantations dedicated to growing extra-fine, top-quality cocoa. Domori was the first company to use this prized cocoa variety with its outstanding characteristics, and it remains the only one to produce a bar made purely from the Criollo variety, following a simple recipe that calls for only cocoa mass and sugar. This relentless pursuit of perfection and purity led its founder to create an actual "Chocolate Tasting Code." The "Domori" brand takes its name from the fascination that seventeenth-century Venice has always held for the company's founder. The name refers to the "Due Mori" (Two Moors), the statues that strike the hours on the bell of the clock tower in St. Mark's Square. Two, just like the seeds of cocoa and coffee, products that embody pure gastronomic pleasure!
