
Caseificio di Manciano
The Caseificio Sociale di Manciano is located just a few kilometres from the medieval village perched on the hill, from whose Cassero tower a wonderful panorama opens up over the whole of the Maremma, from the sea to the mountains. It was in this very area of the Maremma hinterland that, in 1961, thanks to the will of 21 local farmers, the Caseificio was founded, which today counts as many as 250 small and medium-sized sheep farmer members between Manciano and the neighbouring municipalities. In these places, where sheep farming has for centuries been one of the main sources of livelihood, handed down from generation to generation, there are now as many as 60,000 sheep, which generate around 8 million litres of milk a year. The Caseificio also relies on around a dozen dairy cattle farmer members for the production of cheeses made from a mix of cow's and sheep's milk. The fresh and aged sheep's cheeses are produced exclusively with the sheep's milk of the members. The range is wide and marked by quality and genuineness, such as the Pecorino Toscano DOP or the more "refined" cheeses, the result of continuous product improvements aimed at also meeting particular nutritional needs linked to food intolerances. The Caseificio Sociale di Manciano was among the first to establish itself within the Consortium for the protection of Pecorino Toscano DOP and one of the first companies to believe in the value of this quality certification, so much so that in 2014 it also obtained certification for organic Pecorino Toscano DOP, as well as other certifications both at national and international level.
