The Caseificio Sociale di Manciano is located just a few kilometers from the medieval village perched on the hill, from whose Cassero tower a wonderful panorama opens up over the whole of Maremma, from the sea to the mountains. It was precisely in this area of the Maremma hinterland that, in 1961, thanks to the will of 21 local farmers, the Caseificio was born, which today counts as many as 250 member farmers of small and medium-sized sheep flocks between Manciano and the neighboring municipalities. In these places, where sheep farming has represented one of the main sources of livelihood for centuries, handed down from generation to generation, there are now as many as 60,000 sheep, producing around 8 million liters of milk per year. The Caseificio also relies on around a dozen member dairy cattle farmers for the production of mixed cow's/sheep's milk cheeses. The fresh and aged sheep's cheeses are produced exclusively with the sheep's milk supplied by the members. The range is wide and marked by quality and authenticity, from Pecorino Toscano DOP to the more "refined" cheeses, the result of continuous product improvements aimed at meeting specific nutritional needs linked to food intolerances. The Caseificio Sociale di Manciano was among the first to join the Consorzio per la tutela del Pecorino Toscano DOP and one of the first companies to believe in the value of this quality certification, so much so that in 2014 it also obtained certification for organic Pecorino Toscano DOP, in addition to other certifications at both national and international level.
