"The first thing to do to produce beer is to grind the malt, which in the brewing room is mixed with hot water in order to extract the sugars and activate the enzymes that create a fermentable wort..." This is where the beer-making process begins, but even before that, it starts from a dream, an ambitious project by three friends united by their passion for craft beers, who wish to spread the culture, breaking down common prejudices, with the intent of thrilling the most passionate connoisseurs with the rare and precious flavors and aromas that craft beer knows how to give! Only in this way can the simple act of "drinking" be transformed into a tasting experience capable of standing out in the vast and colorful world of brewing. My acquaintance with this small artisan reality begins with my visit to the brewery, located in Liguria, in the heart of Savona, just a few steps from the sea and the Apennines that frame this splendid region. Waiting for me is Pier, one of the three friends and owners of the company, who accompanies me on the journey to discover their project, which has become a well-established reality. The location of a craft brewery is often near springs with particular water characteristics. Its quality, Pier explains to me, is fundamental in the brewing process, especially for certain beer styles. Here at the foot of the Ligurian Apennines, water is certainly not lacking, and it is also of excellent quality. The next step involves selecting and purchasing the finest barley malt, which is the main ingredient used, along with other grains such as wheat, the base ingredient for producing white beers, and to a lesser extent rye, spelt, oats and millet. The ingredient that absolutely cannot be missing is hops, or rather, its inflorescence known as the "cone", which gives beer its bitter, thirst-quenching note as well as its unmistakable aroma. It also contributes to the preservation of the beer itself, as it is a valuable natural preservative. The hops used and skillfully blended are varieties originating from America, New Zealand and the Czech Republic, each with a different character and aromatic profile that will define the various styles. One last ingredient, certainly not least in importance, is yeast, or rather, yeasts, which are used according to their fermentation temperature for the two different methods: top fermentation for Ale beers and bottom fermentation for Lager beers. At the end of my visit, I draw my conclusions and can say that, although the brewery is young, it certainly does not lack the experience of its owners, gained over years of travels, research and countless tastings of national and international beers. Today more than ever, scrupulous respect for production times and methods is the foundation that has allowed and continues to allow the brewery to craft, using the finest raw materials, the various beer styles it offers, each with a distinct and strong character. Naturally aromatic and with a very clear organoleptic profile capable of satisfying even the most diverse tastes. On my fantastic journey through the world of craft beers, the fascinating experience of the Bedreamer brewery and its original beers could not be missed. A "journey" and an experience I recommend you all take as well!
