We are located in the gentle hills of Umbria, where in 1940 our family purchased the Tenuta Di Poggio Aquilone. Out of respect for our territory and its age-old products, we have embraced organic farming for many years. We are dedicated to combining ancient traditions with innovative processes, enhancing authentic products, and producing everything in-house according to our motto: live well, eat better, taste Bio. We grow legumes such as chickpeas and black beans, and cereals such as einkorn wheat and pearl barley. Our pasta is strictly artisanal, made with Senatore Cappelli durum wheat. Our soups are made with our own legumes and ancient cereals, and our flours range from Senatore Cappelli durum wheat to soft wheat 0,1,2 from ancient varieties. Verna wheat is one of the most highly regarded ancient Italian soft wheat varieties for its agronomic, nutritional and organoleptic qualities. Dating back to the Middle Ages, it was rediscovered thanks to agricultural biodiversity recovery projects. Hardy and resistant to pathogens and poor soil fertility conditions, it is rich in minerals and contains natural antioxidants. Thanks to native cultivars in our olive grove, we produce our Extra Virgin Olive Oil from Moraiolo, Leccino, Frantoio and Pendolino olives. Hand-picked to obtain an excellent oil with a medium, well-balanced fruitiness.
