We are nestled in the gentle hills of Umbria, where our family purchased the Tenuta Di Poggio Aquilone back in 1940. Out of respect for our land and its age-old products, we have embraced organic farming for years now. We are dedicated to combining ancient traditions with innovative methods, showcasing authentic products, and we produce everything in-house according to our motto: live well, eat better, taste Organic. We grow legumes such as chickpeas and black beans, and cereals such as einkorn wheat and pearl barley. Our pasta is strictly artisanal, made with Senatore Cappelli durum wheat. Our soups are made with our own legumes and ancient grains, and our flours range from Senatore Cappelli durum wheat to type 0, 1, 2 soft wheat flours from ancient varieties. Verna wheat is one of the most highly regarded ancient Italian soft wheat varieties for its agronomic, nutritional and organoleptic qualities. Dating back to the Middle Ages, it was rediscovered thanks to agricultural biodiversity recovery projects. Hardy and resistant to pathogens and poor soil fertility, it is rich in minerals and contains natural antioxidants. Thanks to native cultivars in our olive grove, we produce our Extra Virgin Olive Oil from Moraiolo, Leccino, Frantoio and Pendolino olives. Hand-harvested, yielding an excellent oil with a well-balanced, medium fruitiness.
