At Acetaia Guerzoni we have one single creed: biodynamic farming. To produce our vinegars we use only the finest organic and biodynamic grapes. We use the finest casks, and carry out the cooking, transferring and ageing with great care. And plenty of patience. Our philosophy has always remained the same over time. Right from the start, back in the 1970s, we chose biodynamic farming when it was still barely spoken of. Three whole generations of farmers from the Modena area. Time passes, but the philosophy stays the same: producing in harmony between man and nature. Indeed, the acetaia holds the world record for being the first to be certified both organic and biodynamic. We are proud of this. It all began with my grandparents Arduino and Zina, Lorenzo tells us. With all their savings, they decided to buy a farm back in the 1970s. Ten years later, they began selling saba and grape must. The unsold portion was turned into vinegar in casks that, once properly aged, would give rise to Aceto Balsamico Tradizionale di Modena DOP. The 1990s saw a growing interest in organic farming. We therefore began to increase the varieties of grapes grown according to the principles of biodynamic farming. Yes, Lambrusco Salamino, Uva d'Oro, Ancellotta, Trebbiano and several other native varieties. A biodiversity that keeps the soil from becoming depleted, unlike monocultures. From 2000 onwards, we also began producing Aceto Balsamico di Modena, both in its IGP and traditional DOP versions. The 2010s marked the start of the third generation, with Lorenzo taking the helm and carrying on the family tradition. Today, the acetaia, while staying true to its origins and traditional products, is opening up to new experimentation. New condiments that blend tradition and experimentation, a contamination of flavours to explore new gastronomic pairings. To celebrate this fusion of tradition, innovation and sustainability: indeed, neither the crown cap nor the dosing cap supplied contain any plastic.
