Sapori di Regalpetra was born with a motto: "We are sun and wind, water and earth of Sicily." Salt is undoubtedly the first and foremost seasoning discovered by humankind, as well as the most widespread and effective natural food preservative, at least until the advent of refrigerators and freezers. It is no coincidence that the word "salary," derived from the ancient Roman practice of paying wages in salt, given its value as a precious commodity, is still present in our vocabulary today. There are basically two types of edible salt in the world: sea salt, obtained through the evaporation of seawater, and rock salt, or halite in Greek (a word made up of "salt" and "stone"), which is extracted from caves and mines. Rock salt is a mineral formed in prehistoric eras from the retreat and drying up of ancient salt seas and lakes, which left behind deposits of extremely pure sodium chloride (that is, salt). Rock salt deposits can be found all over the world, sometimes in places we would least expect. Among the most famous are those of the Himalayas in Tibet, in Namakdan in Iran, in Salzburg—from which the city takes its name, "city of salt"—in Poland, in South America, and here at home in Tuscany and in Racalmuto, between the provinces of Agrigento and Caltanissetta. It is precisely from the Racalmuto deposit that Sali di Regalpetra sources its salt.
