Perlage Winery produces a line of organic still wines through careful organic farming and meticulous production starting from the selection of the grapes. This is how the Col de Fic Pinot Nero Colli Trevigiani IGT is made.

It comes from sun-exposed hillside vineyards, surrounded by ancient oaks, mulberry and fig trees. An environment rich in history and biodiversity, where the vines take root in dry clay soil, ideal for producing full-bodied red wines.

The grapes, grown in this demanding terrain, give the wine depth and personality, with intense aromas of red fruit and a firm tannic backbone. Ageing in oak tempers its power and enhances its refinement, creating a harmonious and elegant balance.

The grapes are almost completely destemmed, leaving a small portion of whole bunches (about 1%). This is followed by a brief cold maceration phase carried out with dry ice. Fermentation and maceration take place in large wooden casks for about two months, with manual punch-downs and délestage during the first weeks. At the end, the wine is transferred to barriques, where it continues ageing for about a year.

The grapes undergo almost total destemming (99%), keeping about 1% of whole bunches
