Since 1998 we have grown exclusively using organic methods, driven by the conviction that healthy eating starts from respected and fertile land. We grow legumes, cereals and olives, following sustainable agricultural practices such as crop rotation and organic fertilisation. We are a young and dynamic company that combines tradition and innovation, thanks also to our collaboration with the University of Agriculture of Perugia. We have an ambitious project: the recovery of ancient and forgotten varieties such as Verna and Gentilrosso wheat, Senatore Cappelli wheat, einkorn spelt, cicerchia (grass pea), black chickpea and hulled barley. Spaghettoni di Poggio Aquilone made from âSenatore Cappelliâ durum wheat is milled in a small old water mill. Grown at Poggio Aquilone, in the hills of Umbria, it is the result of sustainable agricultural practices with careful attention to biodiversity. An artisanal and healthy reinterpretation of traditional Italian pasta. Made with 100% Senatore Cappelli semolina, an ancient and prized variety of Italian durum wheat, it is bronze-die extruded and slowly dried at low temperature to best preserve flavour, texture and nutritional properties.

Pasta: the most loved recipes
Creamy Cacio e Pepe recipe: Toast the coarsely ground black pepper in a pan for 1 minute. Cook the pasta al dente and set aside the cooking water. Prepare the cream in a bowl with the grated pecorino. Gradually add a little cooking water and whisk until you get a smooth cream. Add the spaghettoni to the pan with the pepper. Off the heat, add the cream. Serve with pecorino and freshly ground black pepper.
