The preserves from Azienda Agrituristica Vecchio Frantoio are made with seasonal fruit, carefully selected and picked at the right degree of ripeness.
To ensure maximum quality, the fruit is processed immediately after harvesting, cooking takes about 3 hours over a low flame, and in the meantime the jars are sterilised and washed inside with cooked wine.
Once the desired consistency is reached, the preserve is jarred and the jars are placed in the oven for 10 minutes for pasteurisation.
To produce 100 grams of preserve, 140 grams of cherries are used.
