Giorgio Veltroni is a veterinary doctor who is well known and highly regarded in Arezzo and its province for his clinics. His dream, however, has always been another one: to produce excellent organic extra virgin olive oil. This passion is not the result of a whim, nor does it come out of nowhere, but is rooted in family tradition, among the 7 hectares of olive groves surrounding the splendid Tuscan town of Monte San Savino. Giorgio took me on a tour of his olive groves with his 4x4, and between bumps and rugged tracks he practically introduced me to his olive trees one by one, each with its own peculiarity, exposure, size, age, etc. The care is almost obsessive, starting from the fertilization with manure produced on the farm, to the harvesting and pressing of his green gold. He named his oil Attilio out of gratitude to the agronomist Attilio Guastini, a family friend, who in the 1970s convinced the Veltroni family to plant olive trees with a spreading, drooping habit, low-yielding but hardy and free from fungicidal treatments.
