Sapori di Regalpetra was born with a motto: "We are sun and wind, water and earth of Sicily". Salt is undoubtedly the first and main seasoning that humanity discovered, as well as the most widespread and effective natural preservative for food, at least until the advent of refrigerators and freezers. It is no coincidence that the word "salary", derived from the ancient Roman practice of paying wages in salt, since it was a precious commodity, is still present in our vocabulary today. Basically there are two types of food-grade salt in the world: sea salt, obtained by evaporation of seawater, and rock salt or halite (a word made up of "sale" and "pietra", salt and stone), which is extracted from caves and mines. Rock salt is a mineral formed in prehistoric eras from the retreat and drying up of ancient salt seas and lakes, which left behind beds of extremely pure sodium chloride (salt, precisely). Rock salt deposits can be found all over the world, sometimes right where we would least expect them. Among the most famous are those of the Himalayas in Tibet, in Namakdan in Iran, in Salzburg, from which it takes its name of "city of salt", in Poland, in South America and, here at home, in Tuscany and in Racalmuto, between the provinces of Agrigento and Caltanissetta. And it is precisely from the Racalmuto deposit that the Salts of Regalpetra are selected. Alongside an extremely pure whole rock salt, brothers Carmelo and Giuseppe Brucculeri, in their workshop just a stone's throw from the quarry, have combined what the wonderful land of Sicily is immensely rich in: intoxicating scents and aromas. Thus, for our delight and as a valuable and original help in the kitchen, rock salts flavoured with lemon, Nubia garlic, pink pepper and mandarin, or with Nero d'Avola grape marc, were born.
