An ancient Malvasia vineyard, a long drying process and maturation in small barrels give us this elegant sweet wine. Production area: Rustano, Municipality of Castelraimondo (Macerata) Soil: hilly, medium-textured, tending towards clay with the presence of limestone Grape variety: 100% Malvasia Bianca di Candia Training system: double inverted Harvest: last ten days of September, selection of the best bunches chosen throughout the vineyard Vinification: bunches hung one by one on steel wires, 5-month drying process, natural ventilation in rooms located on the first floor and slow fermentation in French oak caratelli Ageing: 12 months in caratelli plus a further 6 months in steel Bottle ageing: 12 months Total acidity: 6.50 g/l Residual sugar: 90 g/l Alcohol content: 14.5% vol
