Here is the story that inspired Casa Pedona to rediscover the "scoppolato di Pedona"! In the mid-1800s, Giobatta Pacini, a landowner from Lucca, decided to purchase a large flock of sheep to graze on the high lands of Seimiglia, entrusting it to a shepherd, Tristano da Pedona. Every so often, Tristano would travel to Lucca to deliver the sheep's cheese he produced, which was always of poor quality. It was an inexplicable matter. After a reverent "hat tip" (Tristano was always characterized by his unmistakable cap), he confessed to Pacini that the cheese wasn't what he expected. "Maybe it's the grass the sheep eat!" he would justify himself, but there was a secret behind it. Tristano was buying cow's milk from a neighboring farmer and mixing it with the sheep's milk, thus getting enough milk from the sheep to make, on his own account, a pure pecorino cheese, fragrant and flavorful, which he then hid away to age in a cave. Somehow the man from Lucca sensed that behind that poor-quality cheese lay a mystery that needed solving. He sent for the shepherd, who, after the usual "hat tip," insisted that if the cheese wasn't very flavorful, it wasn't his fault. After this evasive answer, one morning, quietly, Giobatta went up to Tristano's sheepfold and came upon him just as he was coming out of a cave. The shepherd, seeing him, turned pale and greeted his master with the usual "hat tip," but Pacini pushed him inside the cavern, where there was a pleasant aroma of cheese. In a niche, wrapped in straw, were dozens of wheels of cheese. Giobatta cut into one of the wheels with a knife and pulled out a flake from inside: an unmatched flavor! At that point, the shepherd had to confess his wrongdoing. "So much for the scoppolato of Pedona!" Pacini exclaimed furiously. And as he chewed that delicious piece of cheese, he added: "You're not a well-mannered man who tips his cap before his master. You're a rascal. But from now on you'll produce this cheese, aging it in the niche of the cave. For me, of course." After about ten years, Tristano stopped doing the "hat tip." A heart attack took him to the other world, and with him ended the production of this unmistakable cheese. Today it has been rediscovered by me, Gabriele Ghirlanda, proof that passion can create unique products!
