The story of Pastificio Carmignani begins in the early 1900s with its founder Adolfo Carmignani, producing durum wheat pasta and milling grain. In the 1950s, in a small workshop in the historic center of Terranuova Bracciolini, the running of the pasta factory passed to Angiolo, who introduced the production of fresh pasta. It was then his worker Omero who created new shapes and fillings for the fresh pasta and transformed the small workshop into a true artisanal company. In 2000, Omero handed the company over to Alessandro and Stefania, who continued the family tradition, paying great attention to the selection of raw materials. Only selected grains of exclusively Italian origin are used, including ancient grains and the famous Senatore Cappelli durum wheat, all produced by local farms. Likewise, only fresh, top-quality fillings sourced from local producers are used. Alessandro and Stefania have created a workshop-kitchen within the company where a gourmet food line is made, featuring first courses and sauces of various kinds. All products contain no added stabilizers or preservatives. The Carmignani brand has always been synonymous with artisanal authenticity and work made with love and creativity.
