Anyone who loves beer simply has to appreciate cider too! This is my belief, and it led me to discover a tiny, artisanal farming venture in the area between the upper Val Baganza and the upper Val Parma. In this wonderful stretch of the Apennines lies the "Tre Rii" farm, in a truly unspoiled place, where nature is free to display all its wild beauty, and where human presence is minimal and well balanced with the surrounding environment. The family-run farm owns an estate of about 80 hectares called "Casarola", on the slopes of Monte Montagnana, in the municipality of Calestano, at an altitude of one thousand meters above sea level. This land consists mainly of coppice woodland and around six hectares of meadow, along with a traditional farmhouse and a spring of exceptionally pure water — an essential foundation for producing top-quality cider! As on all mountain farms, scattered among the meadows are a few fruit trees that once supplemented the family's income and refreshed farmers with their juicy fruit during haymaking. These are some ancient native varieties, from century-old trees that have never received any chemical treatment. Apples are harvested from these trees and then pressed to produce a cider with truly unique characteristics! The tradition of cider-making is quite ancient: farmers who did not have grapevines used these fruits to make a nectar that was commonly enjoyed by families throughout the valleys and mountains of Emilia. The owner of the "Tre Rii" farm, after several years of producing cider for personal use, decided to increase production. With great sacrifice and by investing all his savings, he purchased an old house with a tower dating back to 1694 in the "Tre Rii" locality, in the municipality of Corniglio in the province of Parma, along with all the equipment, setting up the cellar in the old stable and hayloft, where this artisanal, excellent-quality cider is now produced! In addition to production, part of the investment was used to plant several varieties of pink apple trees, as well as beehives for producing honey and mead.
