Shark Bottega del Pesce is a project based on the idea of creating a unique taste experience. A line of fish charcuterie that, thanks to special marinades, original smoking techniques and different cooking methods, takes on unique personality and flavour while retaining the delicacy and taste of traditional charcuterie: this is how the Marinated Salmon Slice was born

Marinated Salmon Slice

The production of fish charcuterie starts first of all with the research and selection of the best raw material. The processing, following their own recipes, takes place in the workshop's laboratory where, thanks to the use of Mediterranean scrub aromas, salts and peppers of various origins and special smoking with apple and olive wood, these creations of the sea come to life. The Marinated Salmon slice is marinated under salt with sugar and Chianti aromas. This preparation is followed by smoking with apple wood. At the base of the preparation is the highly prized carefully selected Scottish salmon, and for the marinating we use Maldon salt. The result is a product with a unique and intense aroma. New flavours and new aromas, a strong desire to experiment and innovate, while following processes perfected through the experience of the artisans of the sea. Best enjoyed on its own, diced, to fully savour it. Serve it with a slice of black bread and salted butter. An idea for a salad with baby lettuce, burrata and semi-dried cherry tomatoes. Soft and delicate.
