Grated Bluefin Tuna Bottarga

the family's history dates back at least two centuries, sailing the seas of Sicily with its boats in search of blue fish and bluefin tuna. Bluefin tuna is in fact a protected marine species whose catch is regulated by ICCAT quotas that limit catches by number and weight. Thanks to this, the Mediterranean is repopulating with this species.

Tuna Bottarga

Bluefin tuna arrive in the Mediterranean in April, coming from the ocean through the Strait of Gibraltar. The fishing season is concentrated in 30 days between May and June. The fish caught are quickly transferred to large tanks in the sea of Sicily and fed only blue fish (herring and sardines) so as to guarantee the best properties in their flesh. A high content of unsaturated fats and omega-3. A very fast process follows: in 4 minutes the tuna goes from the sea to freezing at minus 70°. A very short supply chain and circular work for the family, who therefore handle the preservation and processing of both bluefin tuna and blue fish in their own facility. This guarantees a high quality standard. Each jar bears the BCD number (Bluefin Tuna Catch Document), an âidentity cardâ that guarantees traceability from sea to table. Its flesh, flavour and nutritional values make bluefin tuna a true delicacy.

the bottarga of Mediterranean bluefin tuna is handcrafted and placed in a glass jar. The roe is washed, dry-salted, pressed and left to mature for weeks in the air in controlled environments. The result is a product that keeps for a long time and is highly concentrated in flavour. With Foodaloo discover the best fish preserves.
