Bioalberti is a family-run farm, active for four generations among the hills of Umbria, in Poggio Aquilone, a medieval village dating back to the 1200s where we grow exclusively using organic methods â this is where Zuppa di Poggio Aquilone Bio is born
Since 1998 we have grown exclusively according to organic methods, driven by the conviction that healthy eating starts from respected, fertile soil. We grow legumes, cereals and olive trees, following sustainable farming practices such as crop rotation and organic fertilization. We are a young and dynamic company that combines tradition and innovation, thanks also to our collaboration with the University of Agriculture of Perugia. We have an ambitious project: the recovery of ancient and forgotten varieties such as Verna and Gentilrosso wheat, the Senatore Cappelli wheat, einkorn farro, cicerchia (grass pea), black chickpea and hulled barley. How to cook Zuppa di Poggio Aquilone Bio
It is prepared by sautéing it with a base of chopped aromatics and then slowly cooking it while adding broth. As variations, aromatic herbs can be added to the sauté and it can be served with aged cheese.
Legume Soup Recipe
Organic legume soup from Poggio Aquilone. Make a sauté with chopped onion, carrot, celery and garlic. Add rosemary or bay leaf. Add the soup mix and cover with broth (or water) and cook through. Add pepper and chili pepper, serve with a drizzle of raw olive oil and croutons.
