Among the many wineries, this one caught my attention for its small production of excellence in limited quantity. A type of wine I'm particularly passionate about: Classic Method Sparkling Wines! Here, with great passion, Roberto and his family devote themselves to working in their own vineyards and to producing the typical wines of the Alto Monferrato, but not only that! Production technique: bottle fermentation according to the Classic Method. Time on the lees lasts at least 24 months. Traditional remuage on pupitres and dégorgement à la glace. This is followed by ideal bottle ageing. Dosage: 3 g/l Rich, intense and complex! Its dosage is limited, but this still makes it more "rounded" compared to the Pas Dosé, with greater nuances both on the nose and on the palate
