Among the many companies, this one caught my attention for its small production of excellence in limited quantity. A type of wine I am particularly passionate about: Metodo Classico Sparkling Wines! Here, with great passion, Roberto and his family dedicate themselves to working in their own vineyards and to producing typical wines of the Alto Monferrato, but not only that! Classic wines but also fine ones, dedicated to a public of connoisseurs in search of true artisan products of highly exclusive excellence.   Product sheet: VSQ Metodo Classico Blanc De Noirs Pas Dosé Grape variety: 100% Dolcetto vinified as a white. Production technique: bottle fermentation according to the Metodo Classico. Time on the lees is extended for at least 24 months. Traditional remuage on pupitres and dégorgement à la glace. This is followed by ideal bottle ageing. Dosage: 0 g/l. Zero Dosage, or in French "Pas Dosé." Here the Dolcetto grape variety from Monferrato, vinified without contact with the skins, expresses its character and unexpected finesse! It presents itself with a soft gold hue, bright, and with a very fine, persistent perlage, a sign of great elegance. The aromas are intense and inviting, ranging from the typical bread crust to small white flowers, with hints of ripe white fruit. On the palate it is clean, well-structured, and its effervescence gently caresses the palate. Refined yet at the same time so easy to drink, suitable even for those unfamiliar with this type of wine. The finish is pleasantly long and persistent, leaving a delightful light note of fresh almond that invites another sip. The ideal pairings for this elegant sparkling wine are certainly fresh cheeses, delicate fish dishes, oysters, shellfish or white meats cooked at low temperature.
