This sparkling wine is produced at the La Casanella farm in Lerma, in the province of Alessandria, Piedmont. Grape variety: 100% Dolcetto vinified with gentle pressing. Production technique: bottle fermentation according to the Metodo Classico. Time on the lees is extended for at least 24 months. Traditional remuage on pupitres and dégorgement à la glace. This is followed by ideal bottle ageing. Dosage: 4 g/l
