Senatore Cappelli durum wheat is an Italian excellence, the result of clean farming, ancient varietal selection and respect for the land. It belongs to an ancient variety, rediscovered for its nutritional qualities. The wheat is milled in a small old water mill, using only stone millstones. Bioalberti is a family-run farm, active for four generations among the hills of Umbria, in Poggio Aquilone, a medieval village dating back to the 1200s where we grow exclusively using organic methods: this is where the Millerighe Pasta is born
Since 1998 we have grown exclusively using organic methods, driven by the conviction that healthy eating starts from respected and fertile land. We grow legumes, cereals and olive trees, following sustainable farming practices such as crop rotation and organic fertilisation. We are a young and dynamic company that combines tradition and innovation, thanks also to our collaboration with the University of Agriculture of Perugia. We have an ambitious project: the recovery of ancient and forgotten varieties such as Verna and Gentilrosso wheat, the Senatore Cappelli wheat, einkorn farro, cicerchia, black chickpea and hulled barley. Millerighe from Poggio Aquilone made from “Senatore Cappelli” durum wheat is milled in a small old water mill. The wheat grown at Poggio Aquilone, in the Umbrian hills, is the result of sustainable farming practices with attention to biodiversity. An artisanal and healthy reinterpretation of traditional Italian pasta. Made with 100% Senatore Cappelli semolina, an ancient and prized variety of Italian durum wheat, it is extruded through bronze dies and slowly dried in special chambers at low temperature to best preserve gluten, texture and nutritional properties.
