The Azienda Agricola Il Bottaccio is an oil producer by vocation and by tradition, handed down from generation to generation, with a passion for the olive tree, and certainly the olives are no less important, being an integral part of the work, processed with the utmost care, and it is here that the Organic Monocultivar Tasting Set is produced. We are in Maremma, an unspoiled land suited to olive growing. Here, among these gentle hills, the soils can benefit from the thermal waters that irrigate the subsoil. The company has cultivated different types of olives since ancient times, processed in different ways: both in brine and as extra virgin olive oil. Practices handed down over many generations ensure a consistently high quality product over time. Here quality is at home, and this is why the company has chosen to produce only extra virgin olive oil, in different types able to satisfy different tastes and different uses. The harvest is carried out manually or semi-manually, and particular attention is paid to the selection of the olives. Great importance is given to the pressing times, for which no more than 8 hours must ever pass from harvesting.
