Vecchio Frantoio Agritourism Farm's fruit preserves are made with seasonal fruit, carefully selected and picked at just the right degree of ripeness.
To ensure maximum quality, the fruit is processed immediately after picking, cooking takes about 3 hours on a low flame, and meanwhile the jars are sterilised and washed inside with cooked wine.
Once the desired consistency is reached, the preserve is jarred and the jars are placed in the oven for 10 minutes for pasteurisation.
To produce 100 grams of preserve, 140 grams of blackberries are used.
