Gorgonzola Malghese DOP Gorgonzola cheese, made from whole cow's milk, with milk sourced from farms in our area. It is a mountain pasture cheese with a decidedly spicy flavour, soft and melting on the palate. Try it in a risotto or with speck and gorgonzola gnocchi! Gorgonzola Malghese DOP

It is a blue-veined soft-paste cheese made with pasteurised whole cow's milk. Ours is a mountain pasture cheese ("formaggio di malga"), which we make with milk from farms located in our area. In fact, we are within the provinces of the territory of the Consortium for the protection of Gorgonzola cheese.

The milk used is whole cow's milk, the paste has a lovely white or pale straw colour and shows the typical blue streaks tending towards greenish due to the development of the precious moulds following the blue-veining process.

The rind is present with a colour ranging from pinkish to grey, and is not edible. Its paste has a compact consistency and no holes. To the touch it is creamy.

The âNaturaleâ type has a decidedly spicy flavour. On the palate it is soft, well blended and melts easily in the mouth.

Enjoy it with: Blue cheeses are traditionally paired with fortified wines, the sweetness of the wine creates harmony with the strong flavour of the blue cheese, almost a "meditation" As ageing increases, wines from late harvests or dessert wines such as âVin santiâ are more suitable, Marsala vergine, white or red fortified dessert wines.
