At Latteria Sociale di Branzi Casearia 1953 the production methods have remained unchanged over time, only the tools have changed in proportion to the quantities of milk that are processed here every day: this is where Gorgonzola Malghese DOP is born

The milk used is whole cow's milk, the paste has a lovely white or pale straw colour and shows the typical blue streaks tending towards greenish due to the development of the precious moulds following the blue-veining process.
The rind is present with a colour ranging from pinkish to grey, and is not edible. Its paste has a compact consistency and no holes. To the touch it is creamy.
The âNaturaleâ type has a decidedly spicy flavour. On the palate it is soft, well blended and melts easily in the mouth.
