Dry Apple Cider

Between the upper Val Baganza and the upper Val Parma. In this wonderful area of the Apennines lies the farm "Tre Rii", in a truly unspoiled place, where nature can express all its wild beauty, and where human presence is minimal and well balanced with the environment. The family-run farm owns an estate of about 80 hectares called "Casarola" on the slopes of Monte Montagnana, in the municipality of Calestano, at a thousand metres above sea level. An area essentially made up of coppice woodland and about six hectares of meadow, with a typical farmhouse and a spring of extremely pure water. An essential foundation for producing a top-quality cider, here they make Dry Apple Cider. The company was founded on the initiative of Filippo, an oenologist who invested his savings here in Tre Rii with the idea that here, in the harshness of the Apennines, with cold winter winds and summer sun, wine has always been made from apples and is called Cider, and to make it of quality he gathers wild apples, showcasing their different varieties: The Dry Apple Cider is sparkling, with bottle refermentation and unfiltered; to produce it, wild apples from the upper Val Baganza and upper Val Parma are used. The taste is pleasant and dry. For the production of this type of cider, 50% rose apple is used, and the remaining 50% comes from local, mostly wild varieties, gathered in the upper Val Baganza and upper Val Parma.
