Ricciaia - Dolcetto d'Alba D.O.C. Dolcetto is a traditional wine of Piedmont. Once racked, it undergoes a slow ageing in large wooden barrels that can last up to 12 months. Hence the term "Superiore". Indeed, the beauty of this wine lies in its highly enjoyable drinkability; its aroma is intense, recalling small ripe red berries with a hint of balsamic notes. It pairs well with mixed platters of cured meats and fresh cheeses, medium-aged tomas, and stuffed pasta first courses. Vintage 2021 750 ml bottle

We are in the Langhe at Fontanafredda di Serralunga d'Alba, where the La Biòca winery, with 8 hectares of vineyards, produces the best wines expressing the territory: this is where Ricciaia - Dolcetto d'Alba D.O.C. is born

Ricciaia - Dolcetto d'Alba D.O.C.

Ours is a small business where nothing is left to chance. Here we produce our wines using only our own grapes. The vineyards are located between Monforte d'Alba, Novello, La Morra and Barbaresco. Areas particularly suited to the great wines of the Langhe. We take care of the entire process: from production, to ageing, to sale. We follow the whole process to guarantee the best quality. Technical sheet: Ricciaia Grape variety: 100% Dolcetto Vinification: crushing and immediate start of fermentation in steel tanks and oak tonneaux of various capacities, without temperature control. Fermentation for about 7 days with manual punching down and regular gravity pump-overs. Post-fermentation maceration for 20 days. Ageing: 12 months in wooden barrels of various capacities. Production: approximately 4,000 to 8,000 bottles per year.

Tasting notes

Colour: ruby red Nose: intense, with winy notes, berries, spices, hints of balsamic Taste: soft and full-bodied on the palate, showing acidity and well-integrated tannins, pleasantly bitterish Serving temperature: 16-18°C Recommended pairings: vegetable starters, cured meats, red meats, risottos, mushrooms and legumes.

The hedgehog is the symbol of the La Biòca winery because it is round and hard, just like a "biòca". The ricciaia is a pile of chestnuts, called "maròn" in Piedmontese dialect, which are part of the gastronomic tradition of Cuneo, the provincial capital.
