We are in the Langhe, at Fontanafredda di Serralunga d'Alba, where the La Biòca estate, with 8 hectares under vine, produces some of the finest wines expressing the character of the territory. This is where Grappa di Nebbiolo da Barolo D.O.C.G. is born.
Ours is a small operation where nothing is left to chance. Here we produce our wines using only our own grapes. The vineyards are located between Monforte d'Alba, Novello, La Morra and Barbaresco, areas particularly well suited to the great wines of the Langhe. We take care of the entire process: from production to ageing to sale. We follow the whole process to guarantee the best quality. Technical sheet: Grappa from Barolo Harvest: manual, in crates. Vinification: after the end of fermentation and post-fermentation maceration of the Baroli from the La Biòca winery, the pomace is carefully pressed in a soft press and immediately taken to the distillery. There, distillation takes place in steam stills, on a historic line dating back to the 1930s, recently restored. Ageing: steel for a few months Production: approximately 300 to 400 bottles per year. Serving temperature: 15-18°C Recommended pairings: served at the end of a meal, it is an excellent digestif. It can be paired with aromatic and spiced desserts, and pairs perfectly with dark chocolate. The grappa: produced using traditional methods in one of the oldest historic distilleries in the area, our grappa is a continuation of local traditions; it is a white grappa (unaged), precisely to highlight its natural freshness and body.
