The Rosato 2023 The Rosato 2023  has a beautiful deep cherry red colour. Made with the best and selected grapes of Ciliegiolo and Sangiovese, hand-picked directly in the vineyard. Before fermentation, 12 hours of maceration at 4°. Fermentation in cement vats and ageing sur lies with weekly batonnage until bottling. It offers a fruity bouquet of raspberry with hints of rose and wild strawberries. Ideal to accompany appetisers. Pair it with bruschetta or seafood appetisers. The 2023 harvest gave excellent grapes, thanks to the rainy weather which required our constant presence in the vineyard! That's why we dedicated a wine to the best vintage! We are in Tuscany, in the hills of Gambassi Terme, here the company Fattoria Le Caprine dedicates itself with passion to the production of goat cheeses and wines that are pure expression, and this is where Rosato 2023 is born

The Farm is unique, a true example of a hardworking and passionate family, where everyone works together for the prosperity of the farm. But what strikes you most is that despite the early morning alarms, the hard work of the entire day, without breaks, one day after another. Every member welcomes you with a smile and everyone has the same purpose and the same goal: the wellbeing of their animals and the production of wines according to nature. We are at an altitude of 100 metres above sea level. South-west exposure on clay soils. We take special care to produce it. The harvest is done by hand, selecting the bunches directly in the field. The harvested grapes are placed in small crates to prevent them from being crushed. Every step is carefully monitored to obtain the maximum expression and the best quality. Before fermentation, 12-hour maceration at 4°. Fermentation follows in concrete vats, with ageing on the lees and weekly bâtonnage until bottling.

GRAPES: 60% Sangiovese, 20% Ciliegiolo VINEYARD: Tenuta Fattoria Le Caprine VINE: vineyard age 1970 - altitude 100 metres above sea level. SOIL: silty clay with south-west exposure. VINIFICATION AND AGEING Manual harvest in the first ten days of September. The best bunches selected directly in the vineyard. Transported in 17 kg crates to prevent the berries from breaking. Before fermentation, 12-hour maceration at 4°. Fermentation follows in concrete vats, with ageing on the lees and weekly bâtonnage until bottling. A lovely interpretation of Sangiovese where the Ciliegiolo softens it, bringing aromas and a beautiful deep pink colour. BOTTLES: 600 bottles of 0,75 l TASTING NOTES Colour: Deep cherry-red colour Aromas: On the nose it offers a fruity bouquet of red fruits where raspberry dominates, with pleasant hints of rose and wild strawberries and slight vegetal notes. Balanced and well-structured on the palate, where acidity and smoothness go hand in hand, leading the sip towards the next glass. The perfect wine for your bruschetta appetisers. Taste: On the palate the excellent acidity makes it a harmonious wine. Balanced, it calls for another sip. With floral sensations and a slight citrus aftertaste. Alcohol: 13° Serving temperature: 12 °C FOOD PAIRINGS The ideal pairing is with fish and shellfish dishes. It also pairs well with vegetable dishes, perfect with bruschetta. An excellent wine for starters.
