For more than twenty years the company's goal has been the production of
high-quality chocolate. To do this, it selects excellent raw materials and has relationships with trusted partners, among the world's best producers. This ensures that the process, from cacao harvesting to processing in the plantations, meets high quality standards. Criollo is a very rare and precious variety of cacao that, for years, risked being lost: it is the cacao of the Maya and the Aztecs, whose cultivation was gradually abandoned due to its low yield. It is a delicate cacao and represents only 0.01% of the cacao produced worldwide.
Trinitario cacao is an aromatic cacao. It represents about
8% of the global harvest. Trinitario is a hybrid of Criollo and Forastero cacao, combining some of the aromatic and sensory characteristics of the former with the vigour and high yields of the latter.
Domori has recovered this precious cacao variety, which it harvests from plantations located between Latin America and Africa: in Colombia, Venezuela, Peru, Madagascar and Tanzania.
