But for
Domori quality is an undisputed and fundamental value, the company in fact
controls the entire production chain starting from
selected cacao chosen by their own experts who ensure quality standards by selecting the best raw materials, and this is how the
Criollo 85% Dark Chocolate Bar came to be
Criollo 85% Dark Chocolate Bar
For more than twenty years the company's goal has been to produce
high-quality chocolate. To do this, it selects excellent raw materials and maintains relationships with trusted partners, the best producers in the world. This ensures that the process, from cacao harvesting to plantation processing, meets high quality standards. Criollo is a very rare and precious variety of cacao that, for years, risked being lost: it is the cacao of the Maya and the Aztecs, whose cultivation was gradually abandoned due to its low yield. It is a fragile cacao and represents only 0.01% of the cacao produced in the world.
Trinitario cacao is an aromatic cacao. It represents about
8% of the global harvest. Trinitario is a hybrid of Criollo and Forastero cacao, combining some of the aromatic and sensory characteristics of the former with the vigour and high yields of the latter.
Domori has recovered this precious cacao variety, which it harvests from plantations located between Latin America and Africa: in Colombia, Venezuela, Peru, Madagascar and Tanzania.
