The Genuina

I tried acquacotta on the advice of the owner of the company, Sandra Masi. It is a dish of transhumance, which has become a real institution of Maremma cuisine. A little toasted bread is enough to make a simple dish a real delicacy, with an intense taste, in which the flavor of celery stands out in a particular way.

The soups of the Radici farm come from the desire to help those who don't have time to cook but love to eat well in the kitchen. They are the result of years of experience in the field of organic agriculture and processing of agricultural products and are based on typical recipes of the Tuscan mountain areas. These are dishes that require long and careful processing.
Great attention is paid to the freshness of the ingredients, collected at the right stage of ripeness and transformed within the same day. These soups help to rediscover often forgotten aromas and flavors.
The cooked water is excellent on its own, but with the addition of sautéed mushrooms and poured on small slices of garlicky and toasted bread, it will fill every kitchen with scents of the woods and ancient shepherds' journeys, of transhumance.
