During the process, the product undergoes a maturing period with a particular humidity level in order to achieve a product with the right maturation and to enhance its flavour. In Lucca, "Braschetta" refers to curly kale. A black cabbage with pointed, curled leaves. It is very versatile in the kitchen, used for soups and stews, to make pestos, and braised as a side dish. The idea behind Braschetta came from wanting to create a small line of condiments to enjoy Scoppolato in a new way. Always following the philosophy of good, genuine products, we created a pesto made with black cabbage, Scoppolato and extra virgin olive oil. The interplay of contrasts is very present here: the bitterness of the black cabbage plays a lovely balancing role with the sweetness of this truly unique cheese. The first thing that comes to mind is using it to dress pasta. Perfect for preparing crostini or bruschette to serve as a starter or on a platter. An idea for a crostone?
