Deep roots tie the Testa family to fishing and to the small Sicilian fishing village of Ognina. The family's history dates back at least two centuries, and even today there is a street named after them in the town. The fishing of bluefin tuna represents a true passion and precision, carried out in just thirty days a year, and it is here that the whole Bluefin Tuna Belly is produced

The company's commitment to study and research campaigns in the marine field is especially evident in the capture and processing of Mediterranean bluefin tuna. Bluefin tuna is in fact a protected marine species, whose catch is regulated by ICCAT quotas that limit it by number and weight. Thanks to this, the Mediterranean is repopulating with this species. Bluefin tuna arrive in the Mediterranean in April, coming from the ocean through the Strait of Gibraltar. The fishing season is concentrated in 30 days between May and June. The specimens caught with purse-seine nets are quickly transferred. They are placed in large tanks in the sea of Sicily and fed only oily fish (herring and sardines), so as to guarantee the best properties for their flesh. A high content of unsaturated fats and omega-3. A very rapid process follows: in 4 minutes the tuna goes from the sea to freezing at minus 70°. Fishing, storage and processing take place within a circular supply chain owned by the company. This guarantees a high standard of quality. Every jar of preserves bears the BCD number (Bluefin Tuna Catch Document). A sort of âID cardâ for bluefin tuna that guarantees its traceability from sea to table. Its firmness, flavour and nutritional values make bluefin tuna a true delicacy.

This is a prized and flavourful cut. It comes from the belly part of the fish, near the ventresca, but slightly more fibrous. It is a true marine cured meat.
