The company boasts a long history of well over thirty years of processing and curing the finest catch of the Mediterranean, with recipes handed down since the late 1800s from father to son, careful processing by expert hands, manual salting with Sale di Volterra and long curing: this is how these delicacies are born, and this is how Soppressata di Scoglio is made

Soppressata di Scoglio

The soppressata, also known as carpaccio di scoglio, is made with cooked molluscs and shellfish, king prawns, cuttlefish and squid. Flavoured with selected herbs and spices according to a recipe particularly dear to the salumeria. The slice is nicely firm and compact. Its colour is vivid, ranging from the white of the cuttlefish to the orange of the king prawns. A palette of colours and flavours that makes the product unique and ideal for creating exquisite carpaccios. The flavour is characterised by the typical sweetness of shellfish. It is low in fat and rich in protein. Ideal for those who follow a healthy diet without giving up on taste. Being also gluten-free, it can be enjoyed with peace of mind even by coeliacs. All our preparations and specialties are already delicious just as they are. They can be enjoyed without any dressing to fully appreciate their organoleptic qualities; for those who prefer a more traditional tasting, simply add some good olive oil, or oil and lemon. Ideal for creating exquisite carpaccios accompanied by fresh or cooked vegetables. Delicious to try diced into cubes! Â
