Here the habitat is ideal for aromatic herbs, which grow vigorous and intensely fragrant, as well as rich in aromas and intense, unique flavours. The name comes from the union of two Greek words, "rops", meaning shrub, and "myrinos", meaning fragrant. The etymology could also refer to the Latin "ros marinus", sea dew, or to "rosa maris", rose of the sea, a name that referred to its growing wild along the coasts. It appears as a shrub with numerous narrow, elongated leaves and clusters of small violet flowers. It is a typical plant of the Mediterranean region, with an ideal habitat of sandy, arid soil, typically found in coastal areas. It is harvested from spring through autumn In the kitchen it is extremely versatile, used in the preparation of focaccia, oven-baked and grilled meats and fish, roast potatoes, oven-baked vegetables, and to make excellent marinades. Also used to flavour legumes and soups. It is used for the extraction of its essential oils, pinene, camphene and limonene. Rosemary has been known since ancient times for its beneficial effects on human health; numerous medicinal properties are in fact attributed to it, including: analgesic, anti-inflammatory, antiseptic, expectorant, and antidepressant properties; it stimulates the appetite, aids digestion, and strengthens the heart muscle and circulation.
