The Azienda Due Palmenti is located in Pedara, a village situated on the slopes of Mount Etna in the Due Palmenti district, in the heart of eastern Sicily, a land rich in great rural traditions handed down through generations, this is where Sicilian Chili Pepper is produced. Sicilian Chili Pepper green hills and the majestic Etna in the background, the climate here is characterised by mild winters and hot, sunny summers. The sandy soil is rich in elements originating from the lava flows that have followed one another over the centuries, a place therefore suited to hosting a great variety of native and local crops. Here the habitat is ideal for aromatic herbs, which grow vigorous and intensely fragrant as well as rich in aromas and intense, unique flavours. The chili pepper belongs to the genus Capsicum, a term originating from the Latin capsula, diminutive of capsa, referring to the shape of the fruit which resembles a box containing the seeds. It may also originate from the Greek kapto, meaning to bite, referring to the spicy taste that âbitesâ the tongue when tasted. The fruits have their characteristic spicy flavour due to the presence of capsaicin. The flowers are white and flowering occurs between late spring and summer. The fruits vary in both shape and colour depending on the different cultivars, as well as in spiciness. For its habitat, it requires good light exposure and well-drained soil. The fruits are harvested in summer. Used in the kitchen by all lovers of spicy food. It is used in numerous recipes, from spaghetti such as the classic garlic, oil and chili pepper, to pasta all'arrabbiata. To flavour pizzas, meat and fish dishes, soups and legumes, and to flavour cured meats and cheeses. Known for its anti-inflammatory, antioxidant properties, and it aids digestion by increasing the secretion of gastric juices. Effective in treating colds, sinusitis and bronchitis. It has high amounts of vitamin C, B1, B2, PP, provitamin A and capsaicin, the substance responsible for its spiciness.
