Laurus: the name comes from the ancient Celtic language and means âgreenâ, due to the evergreen nature of the bay laurel. The adjective nobilis, on the other hand, indicates nobility; indeed, since ancient times bay laurel has been used to create crowns and ornaments worn by emperors and military leaders. The laurel wreath is symbolic, representing poets. It is an evergreen plant, with lance-shaped leaves and yellow flowers. It blooms in spring and thrives in temperate climates. It grows wild in plains and hills. It is mainly harvested in winter, and its leaves are used. In cooking, it is traditionally used for roasted meats, stews and casseroles. Oven-roasted potatoes with bay leaf are excellent, as are soups and, of course, legumes. It is also used to prepare infusions and herbal teas. Thanks to its essential oils, bay laurel is useful for treating rheumatism and muscle strains, has relaxing properties and reduces sweating. It is an antiseptic, expectorant, digestive, antipyretic and anti-inflammatory.
