The honey from Azienda Agricola Saluzzi is produced with the utmost respect for nature and for bees in particular, whose work is essential not only for the production of this delicacy, but for the very existence of our planet. This is how Millefiori Honey comes to life
we are in the unspoiled hills of Basilicata rich in flowers and herbs, all of which contribute to making it an even more special product. A honey that respects bees. Whose work is essential not only for the production of this delicacy, but for the very existence of our planet. It all begins with the tireless work of the worker bees that carry nectar and honeydew into the hive. Which are stored in special cells. When the honey reaches a low moisture level, it is capped, meaning the bees seal the cells with wax. At this point the honey is ripe, ready to be harvested. The honeycombs are then extracted, followed by uncapping, extraction (using a special machine called an extractor). Filtering (in which any residual bits of wax and other material that may remain inside the honey are removed). It is then left to settle, followed by skimming, jarring and storage. All these steps are carried out in the company's own workshop. Out of its own ethical standards, the company prefers not to use any invasive techniques on the honey. It lets the crystallization process occur naturally, as a normal physiological process. The result is a honey with an amber colour and a sweet and intense flavour.
