La Terra e il Cielo is a cooperative whose goal is to promote ancient varieties of grains and legumes. The focus is on quality, not mere quantity. That's why production has been deliberately focused on varieties to be rediscovered and relaunched. We have favoured spelt (triticum dicoccum), which is excellent for pasta. The durum wheat of ancient varieties (Senatore Cappelli, Taganrog and Etrusco). The grass pea (lathyrus sativus), a legume known since ancient times that in the past fed the poorest classes.
