Bioalberti is a family-run farm, active for four generations amid the hills of Umbria, in Poggio Aquilone, a medieval village dating back to the 1200s where we grow exclusively using organic methods - this is where the Organic Chickpea Flour is born
Since 1998 we have farmed exclusively using organic methods, driven by the belief that healthy eating starts from respected and fertile soil. We grow legumes, grains and olive trees, following sustainable farming practices such as crop rotation and organic fertilisation. We are a young and dynamic company that combines tradition and innovation, thanks also to our collaboration with the University of Agriculture of Perugia. We have an ambitious project: the recovery of ancient and forgotten varieties such as Verna and Gentilrosso wheat, Senatore Cappelli wheat, einkorn (monococcum) wheat, cicerchia (grass pea), black chickpea and hulled barley. This is our aspiration.
We produce with respect for nature, offering authentic products. Our grains represent the union between Umbrian agricultural tradition and sustainable farming. Poggio Aquilone Chickpea Flour is milled in a small old water mill. Grown in Poggio Aquilone, in the hilly Umbria region, it is the result of sustainable farming practices that are mindful of biodiversity. Chickpea flour is a naturally gluten-free flour, obtained by milling dried chickpeas. It is a highly versatile and nutritious ingredient. Known since ancient times and used in Middle Eastern cuisines. Rich in plant-based protein and a source of fibre. Characterised by a low glycaemic index and naturally gluten-free.
How to use organic chickpea flour: Ideal for preparing farinata and panelle, savoury crepes, and for making meatballs and vegetable burgers.
Quick pan-fried chickpea flour farinata recipe: In a bowl, combine chickpea flour, salt and aromatic herbs. Gradually add water and mix. Let it rest for 5 minutes. Heat the oil, pour in the batter and cook for a few minutes on each side. Serve with a small salad or Greek yoghurt.
