Today, cultivation for this purpose covers a very limited area of the municipalities of Castelbuono and Pollina in the province of Palermo.

Manna is obtained by incising ash trees and letting the sap solidify. From the incision made in the trees, the sap flows out and deposits on the trunk. On contact with the air, it slowly solidifies.
