Grape blend: Trebbiano, Malvasia, San Colombano Vineyard: west-facing, altitude 260 m. Training system: spurred cordon and inverted cordon Planting density: 3400/4500 plants per hectare Harvest: in crates during the first week of September. Then placed on mats until after Christmas. Followed by gentle pressing and transfer of the free-run must into oak and chestnut wood barrels. Fermentation temperature: 18/20 degrees Vinification: entirely in wooden barrels Ageing: in wooden barrels for 5/7 years ORGANOLEPTIC NOTES: Colour: amber with golden highlights Nose: apple, dried fruit, honey, and walnuts Palate: sweet and enveloping, complex, exceptionally smooth and long-lasting. Pairings: primarily a dessert wine, ideal with dry pastries such as "cantucci di Prato", also interesting paired with aged cheeses. Serving temperature: room temperature or slightly chilled with cheeses.
