Batiaje

the typical rounded Piedmontese biscuit made with corn flour (meliga), a true flagship of the family's historic production. With the same passion, the pastry workshop creates delicious meliga pastries and soft amaretti of artisanal production: this is how the Batiaje come to life The artisan workshop boasts a genuine historic production and, thanks to its care and processing methods, has earned the prestigious recognition of artisan excellence from the Piedmont Region. Everything of the original, purely artisanal character has been preserved and jealously guarded. The last descendant, Mirella, and her husband Roberto, the current owners, are happy to carry on the tradition and the historic value tied to it. The Batiaje have been handed down for six generations: today Mirella is the last descendant of the woman who first created the recipe for the famous biscuit in 1850. Meliga pastries where the quality of the ingredients has always been safeguarded. Choosing the best, from the eggs to the best local special flours, all strictly non-GMO, as well as extremely fresh butter. The jealously guarded recipe is the historic one, never changed. For more than 160 years, these delicious shortbread biscuits have been baked in Barge. What's the secret to their goodness? At its core, a generous amount of corn flour and genuine butter. And of course the secret flavourings. Even today they are still made by hand, one by one. Today the classic product is also available in a version with dark chocolate chips, with chopped hazelnuts, and mixed. Batiaje in Piedmontese dialect refers to the rounded biscuit. Made with corn flour (meliga), traditionally used since ancient times, prepared for festive occasions. As for baptisms, "Anduma a batiajè" was the local expression used, meaning "Let's go and baptise," and these special biscuits were made to celebrate.
