At Fenice, we place craftsmanship and traditional values at the heart of our philosophy, and that's where our Organic Dried Chestnuts are born
Chestnuts dried using the traditional method in "metati". The metato is located within the chestnut groves themselves or nearby. Metati are stone structures with a rectangular layout consisting of a single room divided roughly in half in height by a chestnut wood lattice. In the upper part, the chestnuts are laid out to dry. They are periodically moved and turned upside down. Meanwhile, in the lower part, a fire of chestnut wood embers is kept burning. Throughout this time, care must be taken to ensure the embers stay glowing, but without flame. All of this naturally requires constant vigilance and presence. Once dried, the chestnuts are "beaten" to separate the fruit from the shell and inner skin. But that's not all: a new careful selection is needed to check the quality of the product. At this point, we carry out a careful selection, choosing them one by one. Finally, we package them. Here are our dried chestnuts, once known as the "grandparents' candy". Chestnuts are an excellent source of fibre, vitamins and minerals, thus contributing to a balanced diet. Delicious enough to enjoy on their own. Ideal for enriching soups and broths. Try them with legume dishes or vegetables. They are a natural energy snack. Perfect for enriching countless recipes.
